Recipe: Sweet potato fries

Healthy & easy skinny sweet potato fries 


Ingredients: 

-4 sweet potatoes (I tend to use 1 sweet potato per person)
-1 tbsp oil
-2 tbsp plain flour
-2 tbsp paprika
-1 tbsp chilli powder (optional)
-1 tbsp peri seasoning (optional)
-sea salt and pepper

Method:

1) Pre heat the oven to the maximum temperature (my oven goes up to 250 degrees Celsius)- a hot oven will make the fries crispy.
2) Peel and chop the sweet potatoes. I prefer making the pieces long and thin (skinny) because they tend to become crispier when cut in this shape. 
3) Place the chopped sweet potato in a ziplock bag and add the oil, flour, paprika, a pinch of salt and pepper and chilly powder + peri seasoning (if using). You add the flour so that the flavours stick to the sweet potato better and also to make the fries crispier. Mix this all well in the bag together so the sweet potato is all coated.
4) Lightly oil a baking tray to stop the chips from sticking. Lay out the sweet potato onto the tray. Ideally the sweet potato pieces should not overlap too much or they could turn soggy.
5) Bake in the oven for 20-25 minutes. Every 5 or so minutes using a spatula, turn the sweet potato chips over. If they look like they are about to burn then stop cooking.
6) IMPORTANT STEP: once the 25 minutes have passed, switch off the oven, but leave the oven door open and leave the sweet potato fries to cool in the oven with the door open ( for about 30 minutes) this will make them even crispier.

Serve on newspaper for an authentic look.
